A perfect tangy salad for the warmer days. We used fried tofu but you can use feta cheese too.
½ cup plum tomatoes
lettuce, chopped into strips (we used round lettuce
handful of mint, thinly chopped
½ red onion, thinly sliced
1 nectarine
1 slab of tofu, in squares and fried
salt and pepper, add to taste
chilli flakes (optional)
½ lemon, juiced
drizzle of olive oil

Toss all ingredients in a large bowl ensuring lemon and oil dressing is well integrated.
