A popular Indian dessert made with grated bottle gourd (lauki). It is creamy pudding flavoured with cardamom and nuts. The halwa is easy to make but takes some time and has to be stirred continuously.

 1 large dudhi, grated
 2 tbsp ghee
 2 cups milk
 6 tbsp sugar, or add to taste
 1 tbsp saffron to sprinkle
 1 cup milk powder
 1 ½ tsp cardamom powder
 4 tbsp nuts, chopped

Peel and grate the dudhi. Heat the ghee in a pan on medium heat and add the grated dudhi in and stir well. Ensure to stir the mixture often.

Once the moisture dries add the milk and mix well.

Allow the milk to boil and keep stirring at times. Once the milk is boiled and thickened, add the sugar.

Then add the saffron and continue to stir.

Add the milk powder, cardamom power and chopped nuts and mix well.

Continue to stir and the mixture will start to thicken and will all be one consistency and a slight brown colour. The ghee will start to release on the sides and there should not be any liquid left.

Garnish the halwa with more nuts and saffron when serving. The halwa can be served hot or cold depending on your taste, we like to serve it hot and with vanilla ice cream!
