Dough
 3 cups plain flour
 1 small sachet of yeast
1 tbsp sugar, or add to taste
1 tbsp salt, or add to taste
 2 tbsp oil
3 cups water, or add as required
Tomato Sauce
 3 tbsp oil
 1 ½ onion, finely chopped
 4 garlic cloves, chopped
 6 tomatoes, finely chopped
 2 tins of tomato puree
1 tbsp salt, or add to taste
1 tbsp sugar, or add to taste
 2 tbsp oregano
 1 tbsp mixed herbs
 ½ tsp cinnamon powder
Small bunch of basil leaves, finely chopped

Dough
1

Mix the flour, yeast, sugar and salt together in a large bowl and stir in the oil. Gradually add the water and mix well to form a soft dough.

2

Turn the dough out on to a floured surface and knead until smooth. Transfer to a clean bowl, cover with a damp tea towel and leave to rise for about 2 hours.

3

Preheat the oven to its highest setting. Divide the dough into 3 balls and roll each out on a lightly floured work surface.

4

Spread homemade tomato sauce (recipe below) over each pizza base and top with your favourite toppings. For the pizza toppings we used: chillies, peppers, sweetcorn, onions, pineapples, mushrooms, jalapenos, olives, spinach and cheese.

5

Bake the pizzas in the oven for 30 minutes minutes until the bases are crisp and golden brown around the edges.

Tomato Sauce
6

For the tomato sauce, heat the oil in a saucepan over a low heat, then add onion and cook until the onion has softened. Add the garlic and fry for another minute.

7

Add the tomatoes and tomato puree along with the salt, sugar, oregano, mixed herbs and cinnamon powder and simmer for 20 minutes until the sauce has thickened.

8

Blitz the sauce in a blender to create a smooth texture and then stir the basil into the sauce. Sauce is now ready to be added onto the pizza dough.
