Kheer, a rice pudding that is a common dessert made in every Indian household. It only has 3 main ingredients: rice, milk and sugar. There are various flavours that can be added in Kheer including: cardamom, rose water, saffron and nuts.

 ¼ cup rice
 1 tsp ghee
 1 l milk
 A pinch of saffron
 4 tbsp sugar, or add to taste
 1 ½ tsp cardamom powder
 ½ tsp nutmeg powder
 A handful of chopped nuts

Rinse the rice in water and let it soak for 30 minutes.

Heat a pan and add ghee. Drain the rice using a colander and add the soaked rice into the pan. Stir the rice with the ghee until all combined.

Add the milk to the pan and stir continuously. Allow the milk to boil which will take around 15 minutes. Ensure the milk doesn’t stick to the bottom of the pan so continue to stir.

Let the kheer cook on low heat for another 15 minutes. Once the milk has thickened and the rice is cooked add the saffron and let it cook for 2 minutes. Then add sugar, cardamom powder, nutmeg powder and chopped nuts and stir frequently. We used pistachios, almonds and cashew nuts.

Garnish the kheer with more nuts and it can be served warm or cold.
