An aromatic rice dish with mixed dal. Jeera rice is a popular dish which many people have instead of plain rice to go along with dals or curry dishes. The spices that are added to this dish gives it a fragrance that takes this simple dish a notch up!

 1 cup rice
 2 cups water, for soaking
 ½ tsp salt
 1 tbsp ghee
 3 bay leaves
 2 curry leaves
 6 cashews
 1 inch cinnamon stick
 4 cloves
 1 tsp cumin seeds (jeera)
 2 tbsp coriander, chopped

Wash the rice a few times, and then soak it in enough water for 30 minutes. When you are ready to cook the rice, drain all the water from the rice.

The rice is ready to be boiled so add double the amount of water as rice, add salt and then cook rice until fluffy.

Heat ghee in another pan and add bay leaves, curry leaves, cashews, cinnamon stick, cloves and cumin seeds. Let this cook for a couple of minutes until the cumin seeds starts to sizzle. Make sure the cumin seeds do not turn dark brown/black colour as this is a sign that the cumin seeds have burnt.

Then add this spice mixture into the pan with the rice and cook this for a few more minutes on a medium heat. Top with coriander and this is now ready to serve with dal.
