Cauliflower cheese, who can say no to this? 
We combined two BBC food recipes together to make this as we wanted a hint of spice. This baked dish is so creamy and so good that you’ll definitely be going for a second helping!

 1 head cauliflower, cut into florets
  cup butter
  cup plain flour
 1 ½ cups milk
 1 cup mature cheddar, grated
 1 tsp paprika
 ½ tsp cumin powder
 1 tsp black pepper
 salt, to taste

Preheat the oven to 190C.

Wash the cauliflower thoroughly and place in a large saucepan of salted water. Bring to boil and cook for 5 minutes, until the cauliflower is almost tender. Tip into a colander and drain.

Wipe the saucepan clean and melt the butter to make the sauce. Stir in the flour and cook over a gentle heat for 1 minute.

Remove the pan from the heat and gradually add the milk, a little at a time, stirring well. Return the pan to a medium heat and bring the mixture to the boil, stirring constantly. Simmer for 2 minutes, then remove from the heat. Add two thirds of the cheese, stir it and set aside.

In another bowl, add the cauliflower, spices and seasoning and toss them all together.

Arrange the cauliflower in an ovenproof baking dish. Carefully pour over the sauce, ensuring the cauliflower is completely covered. Scatter over the remaining cheese and bake for 30 minutes, until the top is golden brown.
