Afternoon tea with this soft, moist and gooey carrot cake. A cake with cinnamon, walnuts and cream cheese which will be a great hit with family and friends!
Grease a 6 inch pan and line the base with baking paper. Heat the oven to 170C.
Mix the milk, vinegar, sugar, oil and vanilla. Stir well until the oil is no longer seen.
Sieve the flour, baking powder, baking soda, salt, cinnamon, nutmeg.
Mix the wet ingredients to the dry ingredients and then add the grated carrots. Then pour the mixture into the prepared tin and bake for 30-35 mins or until a toothpick inserted comes out clean.
For the frosting add the cheese and butter to a mixing bowl and whisk well until smooth.
Then add the icing sugar and vanilla extract and beat until fluffy, creamy and of spreading consistency.
Transfer the frosting to the cake and sprinkle chopped walnuts. If the frosting is too soft and runny then you can refrigerate for 30 minutes and once it has cooled then apply it onto the cake. The cake can be cut into 2 different layers and then frosting can be added in between the two layers and at the top of the cake.
