Beetroot brownies – vegetables in a dessert? Why not? Especially when they give it such a beautiful colour and add their natural sweetness. Made with unrefined sugar and lots of chocolate, and also a healthier treat compared to normal brownies!

 3 small precooked beets
 1 cups + 2 tbsp plain flour
 ½ cup cocoa powder
 1 tsp cinnamon
 1 tsp baking powder
 1 tsp bicarbonate soda
 ¼ tsp salt
 ¾ cup maple syrup
 ½ cup plant milk (we used oat)
 1 tsp vanilla extract
 ½ cup chocolate chips

Preheat oven to 180 degrees and line a 9 x 13 inch baking tray with baking paper and grease

Blitz beets in a food processor into a puree

Add dry ingredients to a large bowl and mix to combine

Add wet ingredients including beetroot puree and combine

Add chocolate chips and fold them in

Pour batter into baking tray and bake for 25 minutes until toothpick is clean

Cool for at least 30 minutes and enjoy!
